Beef & Ricotta Patties with Tomato Salsa
Serves: 4
POINTS per serve: 6
CORE: Replace the Lebanese Bread with Wholegrain.
Prep Time: 15mins
Cooking Time: 10 min

Ingredients

extra lean beef mine - 400g
low-fat fresh ricotta - 100g
egg - 1, lightly beaten
garlic clove - 1, crushed
dried oregano - 1 tsp
tomoatoes - 3, diced
black olives (in bine) - 12, pitted, chopped
red ionion - 1/4, finely chopped
iceberg lettuce - 2 cups, shredded
lebanese breads - 2 (83g each), halved

1.
Preheat your oven to 120°C. Combine the mince, ricotta, egg, garlic and oregano in a large bowl. Season with salt and freshly ground pepper. Form into 12 patties.

Place the bread on a baking tray in the oven for 10 minutes.

Meanwhile, spray a non-stick frying pan with oil. Add the patties to the pan, cook over a medium heat for 3 - 4 minutes each side or until golden and cooked through. Place in oven to keep warm.

Combine the tomato, olives and onion. Divide the lettuce between 4 plates. Top with patties and salsa. Serve with the warmed bread.

Beef Nachos

Serves: 4

Prep Time: 5mins
Cooking Time: 20mins

Ingredients
Labanese Bread - 2 (83g each)
Extra lean beef mince - 400g
Taco Seasoning - 35g packet
Tomatoes - 6, roughly chopped
Tomato Paste - 1/4 cup (60g)
Beef Stock - (use stock cubes) 160ml
Low-Fat Fresh Ricotta - 1/3 cup (80g), crumbled
Fresh Coriander Leaves - 2tbs, chopped (optional)

Prehat the oven to 200c. Cut the bread into triangles and place on a baking tray. Spray with oil and cook for 10mins or until golden. Transfer to wire rack to cool.

2.
Meanwhile, spray a non-stick frying pan with oil. Add the mince over medium heat until browned. Add the taco seasoning, tomato, tomato paste & stock. Reduce heat to medium low and simmer for 20mins.

3.
Scatter the beef with the ricotta. Serve with Lebanese bread.

Ricotta, Ham & Tomato Toasted Sandwiches

Serves: 4
POINTS per serve: 4 1/2
CORE: To make this recipe CORE, replace Lebanese bread with wholegrain.
Prep Time: 10mins
Cooking Time: 10mins

Ingredients
Labanese Bread - 4 (83g each)
Shaved Ham - 200g
Tomatoes - 4, thinly sliced
Tomato Paste - 3 tbs (60g)
Low-Fat Fresh Ricotta - 160g
Red Onion - 1/2, thinly sliced
Red Chili Flakes - 1/4 tsp (Optional)
Iceberg Lettuce - 2 cups, shredded, to serve

1.
Heat a toasted sandwich maker. Spray one side of each bread with oil. Place oil-side down on a clean work surface. Spread half of each bread with paste. Top with ricotta, ham, tomato, and onion. Sprinkle with chilli (if using). Season. Fold to enclose filling.

2.
Toast in the sandwhich maker until golden and crisp. Repeat with the remaining sandwiches. Cute into wedges and arrange on serving plates with lettuce. Serve.

Spiral Pasta with Tomato & Ricotta

Serves: 4

Cooking Time: 10mins

Ingredients
Fusilli (spiral) pasta - 300g
Freshly Squeezed Lemon Juice - 3 tbs (60ml)
Garlice Clove - 1, crushed
Tomatoes - 4, diced
Low-Fat Fresh Ricotta - 240g, crumbled
Fresh Basil Leaves - 1/4 cup, shredded


1.
Cook the pasta in boiling water, following the packet instructions. Drain, reserving a little of the cooking water.

2.
Place the pasta in a large bowl. Add the lemon juice, garlic. tomato, ricotta and basil. Toss to combine. Add a little of the reserved water to moisten if necessary. Serve.

Ricotta, Bacon & Crisp Bread Salad

Serves: 4

Ingredients
Lebanese Bread - 2 (83g each), torn into small pieces
Weight Watchers Bacon - 12 slices, halved
Iceberg Lettuce - 1/2 (500g), torn into small pieces
Tomatoes - 3, coarsely diced
Lebanese Cucumber - 1, coarsely diced
Weight Watchers Caesar Dressing - 1/3 cup (80ml)
Low-Fat Fresh Ricotta - 2/3 cup (160ml)
Avocado - 1/2 medium (80g), peeled, diced

Preheat the oven to 200°C. Place the bread on a baking tray in a single layer. Spray with cooking oil. Cook for 10mins or until golden and crisp.

2.
Meanwhile, spray a non-stick frying pan with oil. Heat over a medium-high heat. Add the bacon, cook for 3 minutes. In a large bowl, combine the lettuce. tomato, cucumber and dressing.

3.
Transfer lettuce mixtures to a serving dish. Top with bread, bacon, ricotta and avocado. Serve.
