Lemon Prawns with Minted Cabbage

--> TIP If you're like me and are not very fond of fiddling with seafood, ask your local fishmonger to peel and devein the prawns for you!

Ingredients
16 uncooked kingprawns, peeled leaving tails intact, deveined
t tbs lemon pepper seasoning
1 stick lemongrass, trimmed, finely grated
2 garlic gloves, crushed
2 tsp finely grated lemon rind
2tbs freshly squeezed lemon juice
120g red cabbage, core removed, shredded
120g savoy cabbage, core removed, shredded
1 cup loosely packed fresh mint leaves
lemon wedges to serve



1. Combine prawns, lemon pepper, lemongrass, garlic and half the lemon rind and juice in a large glass bowl. Cover with plastic wrap and place in the fridge for 10mins to marinate.

2. Heat a large wok on high heat. Spray with oil. Add half the prawns and stir fry for 4 - 5 mins or until they curl and change colour. Transfer to another bowl. repeat with remaining prawns.

3. Place cabbage, mint and remaining rind and juice in a large bowl. gently toss to combine. taste and season with salt and pepper.

4.Divide cabbage mix among serving plates. Top with Prawns. Serve with lemon wedge.
