Carribean Jerk Rub

1 x 2” piece of Cinnamon stick, roughly broken up
2 x whole Cloves
1 tsp dried thyme
½ tsp whole black peppercorns
1 tsp rock salt
1 strip of lemon zest
½ garlic clove
1 tsp paprika

Place the cinnamon, cloves, thyme and peppercorns into a mortar and pestle. Smash/Grind them around until the ingredients are broken into small pieces, then add the salt, lemon zest, garlic and paprika.

Smash them up a bit more and your rub is ready!

If you do not own a mortar and pestle, you can use a food processor or blender, and just use the pulse feature until you obtain the desired consistency.

Serving suggestion:

Massage it well into chicken or fish before roasting, grilling or barbecuing and transform a midweek meal into an exotic dish you’ll want to repeat every day!
