Cottage Pie

Ingredients
onion - 1 large, diced
carrot - 1 large diced
extra lean beef mince - 500g
garlic clove - 1 crushed
plain flour - 1 tbs
tomatoes - 1 x 400g can
beef stock cube - 1
potatoes - 4 medium, peeled and cut into chunks
skim milk - 1/3 cup
weight watchers tasty cheese - 1/2 cup
peas - cooked to serve


How To

1. preheat oven to 180c. spray a large non-stick frying pan with oil. heat over medium heat. add onion and carrot. cook for 3 - 5 minutes or until soft. add mince and cook until browned. stir through garlic and flour and cook for 1 minute

2. stir in tomatoes and crumble over stock cube. bring to the boil. cover and simmer for 20 minutes. season to taste with salt and pepper.

3. meanwhile, place potatoes in a large saucepan and cover with cold water. bring to the boil and cook over high heat for 15 minutes or until tender. add milk and mash. season with salt.

4. spoon meat mixture into a casserole dish or 4 small dishes. spread mashed potato on top and sprinkle with cheese. bake for 30 minutes or until cooked through an golden on top. serve with peas.
