Grilled Curry Chicken & Snow Pea Pita

Ingredients
1 garlic clove, crushed
3 tsp mild curry powder
2 tbs freshly squeezed lemon juice
1 medium (200g) single chicken breast fillet, cut in half horizontally
quarter red capsicum, deseeded, thinly sliced
fresh coriander leaves, chopped
30g snow pea sprouts
2 medium wholemeal pita pockets
¼ cup low fat natural yoghurt
How To:
place the garlic, curry powder, lemon juice and chicken in a glass bowl. Gently toss. Preheat a chargrill pan over a medium heat. Grill chicken for 2 mins each side brushing occasionally with the marinade, Or until cooked through and brown.
Use a sharp knife to cut into 1 cm thick strips.
Divide the chicken, capsicum, snow pea sprouts and coriander leaves among each pocket. Drizzle with yoghurt. Serve.
