Passionfruit Parfait & Cinnamon Crisps

Ingredients
1tsp Sugar
¼ tsp Ground Cinnamon
1 Sheet of Filo Pastry
2 x 125g Tubs of Nestle Diet – Creme caramel
2 Small Ripe Bananas – Thinly Sliced
Passionfruit Pulp – From 2 Passionfruit



Cooking Instructions

1. Preheat oven to 200◦C, 180◦C for fan forced. Line a baking tray. mix sugar and cinnamon. Lay pastry flat and spray with Canola oil. Fold in half vertically, spray then top with one third of the sugar mixture. Fold in half again vertically, spray and top with half of the remaining mixture. Fold in half horizontally, spray and use the rest of the mixture.

2. Cut in half horizontally and cut each square into 4 triangles. Bake for 5 minutes or until golden. Set aside to cool.

3. Place the creme caramel in a bowl. Beat until smooth. Divide half among 4 serving glasses or dishes. Add half the banana and half the passionfruit evenly. Top with remaining Creme Caramel, banana and passionfruit. Serve immediately with the cinnamon crisps.
