(LC) Beef Rendang with Rice Pilaf

Let me set the scene for you; Outside it’s grey and raining and it’s cold. In front of me is a hot, fragrant curry with rice. There has never been a more perfect and romantic match than this. Once I tore back the plastic top and caught a waft of the food encased below, I was drooling and looking forward to devouring this meal.
It was a pleasant surprise to discover that the beef actually tasted like beef, and, was actually tender! Unfortunately, there just wasn’t enough of it. Maybe 4 or 5 small (1cm cube) pieces. The rice was chewy and fluffy and the potato was cooked perfectly. The sauce provided just the right about of heat without overpowering the delicate curry flavours. If you cannot handle ANY kind of heat in a meal, then you might avoid this. If you’re like me and quite enjoy the heat of curries, then this will satisfy you without making you sweat.
Apart from wanting a few more pieces of beef, the only downside to this meal was once it was finished, I found myself pouting and muttering “me want more..”.
A perfect meal to have on hand for when I want a curry and no one else does!
