Lamb & Hummus Pizza

Ingredients

4 Small Pita Breads
½ Cup Tomato Salsa
2 Small Lean Lamb Steaks
½ Punnet Cherry Tomatoes – Cut Into Halves
4tbs Low-Fat Hummus Dip

Point Free Salad Vegetables – To Serve

Cooking Instructions

1. Preheat Oven to 200◦C, 180◦C for fan forced. Cover and coat a flat oven tray with cooking spray.

2. Lightly grill the lamb steaks, 2 – 3 minutes on each side (steaks should be slightly under cooked), Slice into strips.

3. Spread the breads with salsa and arrange the lamb strips over the salsa. Top with tomatoes.

4. Bake in the oven for about 6 minutes. Top with hummus and serve with a salad.
