Marshmallow With Berries

Ingredients
gelatine - 2 tbs
caster sugar - 1 1/2 cups
vanilla extract - 1 tsp
pink food colouring
light desiccated coconut - 1 tbs
frozen mixed berries - 1 1/2 cups


How To
1. grease and line a 16 x 26 x 3 cm slice pan with baking paper. combine gelatine and 1/2 cup cold water in a heatproof jug. sitr witha fork to combine. microwave, uncovered, for 45 seconds on high. stir with a fork until mixture is clear. set aside to cool.

2. using an electric mixer, beat sugar and 1/2 cup water for 5 minutes or until white. pour cooled gelatine into sugar mixture. beat for 10 minutes or until very thick. add vanilla and pink food colouring. beat for a further minute or until well combined. spoon into prepared pan. smooth top. set aside at room temperature for 2 hours or until set.

3. cut marshmallow into 16 squares with a wet knife. place 1 slice on a serving dish. top with berries and sprinkle with cocnut. serve.
