Linguini Marinara

Ingredients
400g fresh marinara mix
320g dried linguini
2 garlic cloves, crushed
4 green shallots, ends trimmed, chopped
1 x 400g can diced tomatoes
2 tbs freshly squeezed lemon juice
1/3 cup chopped fresh flat leaf parsley
How To:
Heat a large saucepan over high heat. Spray with oil. Add half the marinara mix and cook, stirring, for 2 minutes or until brown. Transfer to a colander. Reheat pan and repeat with the remaining mix.
Clean saucepan and fill with warm water. Bring to the boil. Add pasta and cook, following packets instructions, or until tender. Drain. Return to pan.
Add the garlic, shallots, and tomatoes. Bring to the boil. Add juice and marinara mix and gently stir until mixture boils. Remove from heat. Add parsley. Taste and season with salt and pepper.
Divide among shallow serving bowls. Serve.
