10-Minute Breakfast Muffin

Ingredients

1¾ Cups Self-Raising Flour
1tbs Castor Sugar
100g Reduced-fat, Artificially Sweetened Yoghurt
1 Egg
¾ Cup Skim Milk
1 Cup Canned Pie Apples
2tbs Diet Caramel Topping

2tbs Diet Caramel Topping – To Serve

Cooking Instructions

1. Lightly coat 6 microwave-safe muffin pans or ramekin dishes with cooking spray.

2. Sift the flour into a medium bowl. Stir in the sugar.

3. Combine yoghurt, egg, milk, apples and caramel topping in a separate bowl, and then add to the flour mixture. Stir gently until just combined. There may be flour pocket and some lumps, but that’s okay.

4. Spoon mixture into the prepared pans and microwave on high for 6 – 7 minutes. Serve with extra diet topping.
