Soy & Sweet Chilli Fish With Steamed Rice

Ingredients
basmati rice - 1 1/3 cups
skinless fish fillets - 4 x 150g
light soy sauce - 2 tbs
sweet chilli sauce - 2 tbs
garlic clove - 1 crushed
steamed asparagus - to serve
steamed snow peas - to serve
How To
1. preheat oven to 200c. place rice in a medium saucepan and add 2 cups of boiling water. bring to the boil over high heat. as soon as it boils, reduce heat to very low. cover and cook for 12 minutes - water shouldnt bubble out of saucepan. turn off heat, cover and stand for 10 minutes. fluff with fork just before serving.
2. meanwhile, place fish in a baking dish. combine soy sauce, sweet chilli sauce and garlic and spoon over fish. bake for 6 - 8 minutes, depending on thickness of fish. place fish on rice. spoon pan juices over fish and serve with asparagus and snow peas.

Thanks for this - although not CORE, only the sweet chilli sauce needs to be counted :-)
