Creamed Rice Brulee With Fruit Salsa

Ingredients
calrose medium grain rice - 1/2 cup
skim milk - 2 cups
caster sugar - 1 1/2 tbs
vanilla extract - 1 tsp
brown sugar - tbs
strawberries - 60g diced
kiwifruit - 1, peeled, diced
How To
1. cook rice in a saucepan of boiling water for 5 minutes. drain. return to the saucepan and add milk and sugar.
2. bring rice mixture to the boil over medium-high heat. reduce heat to low and cook, stirring regularly, for roughly 20 minutes, until the rice tender and creamy and liquid is almost absorbed. stir constantly towards the end of cooking time to prevent sticking. stir in vanilla.
3. preheat grill on high. spoon rice mixture into 1/2 cup capacity heatproof ramekins. sprinkle with brown sugar. place under grill for 2 - 3 minutes, or until sugar is caramelised. serve immediatly with combined strawberries and kiwifruit.
