This was a surprisingly lovely meal that actually tasted like a home cooked risotto!
As normal, there wasn’t very much chicken involved in the dish but there was a lovely marinated flavour that did coincide with it. The sauce mixed with the vegetable flavourings really brought a ‘spring’ feel to the dish and they were subtle enough without being non-existent.
If you let the meal sit for a minute or two, the sauce really does thicken and become quite creamy.
I wouldn’t suggest this meal for dinner but for lunch, it’s perfect.
